Coffee honey is a very special and unique honey, its production is very difficult because the flowering of the coffee tree is short, which forces beekeepers to practice the transhumance of the hives, that is to say to transport them from one area to another every week during the harvest period (from mid-August to mid-September in general).

Ideal as an accompaniment to ice creams, pastries or to sweeten infusions for its fruity and mocha taste which gives them a particular flavor while reducing the caloric intake compared to sucrose. Coffee honey is also said to relieve sore throats.

Recipe idea: walnut, coffee and coffee honey cake Ingredients (for 6 people)

  • 125 g of nuts
  • 150 g flour
  • 125 g butter
  • 150g sugar
  • 3 tablespoons of coffee honey
  • 3 eggs
  • 1 sachet of baking powder
  • 1 teaspoon coffee extract

Preparation:

  • Preheat the oven to 180° then melt the butter
  • Mix the nuts quite coarsely.
  • In a salad bowl, mix the butter and sugar.
  • Add the eggs one by one
  • Pour in the flour and yeast and mix until the mixture is smooth.
  • Add the nuts, coffee honey and mix again.
  • Place the dough in mini cake molds
  • Bake for about 30 minutes at 180°
